Objective:
• To assess the suitability of milk for high heat treatment and also to get idea about the acidity of milk.
Apparatus
• Test tube
Reagents
• Alcohol alizarine solution - 0.2 per cent
Procedure
• Take about 5 ml of milk in a test tube.
• Add equal amount of alcohol alizarin solution (0.2%).
• Mix the contents well.
• Observe for presence of flakes and colour of the contents.
